Spinach – Feta Crustless Quiche

Versatile and healthy quiche recipe without a crust. Today I am going to show you my favorite – easy go to recipe that you can make ahead. This recipe is made with egg whites, spinach and feta cheese.

Play around with the flavors: You can venture out and use other ingredients you have around: leftover ham, cubed cooked potato, bacon, broccoli, tomatoes.. anything you would like.

Ingredients

For the Waffles

  • 32 oz liquid egg whites
  • 1 cup spinach
  • 1/2 cup feta cheese

Method

  • 1)

    Preheat oven to 375F

  • 2)

    Grab a 9 inch pie pan and spray it with cooking spray.  (9×10 baking pan would also work)

  • 3)

    Add spinach and pour your liquid egg whites on top of it.  (add salt & pepper – if you like)

  • 4)

    Sprinkle the feta cheese on top

  • 5)

    Place in the preheated oven and bake for 50 min.

  • 6)

    Once finished baking – let it cool for 10 min.
