Why I use ” Doctored” Cake Mix?

Using doctored cake mix vs making a cake from scratch is huge debate and somewhat of a controversial topic.
As you all know, cakes mixes can be found at any supermarket in the baking section. There are many different brands with variety of flavors. Each box contains the dry ingredients you just have to add eggs, water, and oil (sometimes butter). I take mine to the next level and “doctor” it up. I add additional ingredients such as sour cream, buttermilk and variety of extracts. These added ingredients elevate the cake batter and takes it to the next level.
For classic cakes with traditional American buttercream I prefer to use “doctored” cake mixes. On my blog you see a section dedicated to Easy Cakes which feature “doctored” up cakes. Here are my reasons why!
- Cakes come out the oven with a flat top – do not need to trim
- Encourages beginner bakers to try a recipe that actually works
- Most likely always have the ingredients on hand
- Consistent results
- Thick, but not dense
- Moist not crumbly
- Bake how & what makes you happy!
